Dumplings
2 c All Purpose Flour
1/3 c Shortening
2 tsp. Baking Powder
1 tsp. Salt
Enough Milk to make soft dough.

Broth for Dumplings
1 whole Chicken cut up
1 sm Onion finely diced
1-2 stalks Celery (to taste)
Salt and Pepper

Broth: Cover chicken with enough water to equal at least 6 quarts. Bring to slow boil. Reduce heat and simmer until chicken is cooked. Remove chicken and let cool. Remove from bone.

Dumplings: Sift dry ingredients. Cut shortening into flour until small "pearls" form. Add milk small amounts at a time so as not to get dough to sticky. Form into ball. Wrap in plastic and let rest for a while. Roll dough to desired thickness. Drop in by layers in boiling broth and allow broth to boil over each layer before adding next. Cover, reduce heat and simmer for approximately 12-15 minutes or desired consistency. Add cooked chicken about 5 minutes before serving.

Skip asked for Auntie Boots recipe. I don't know that she ever had one. On our trips to and from Woo Woo and Grands house in Jackson, Ms we would stop at her house in Hattiesburg, Ms. She always had to make "Sonny Boy" (Grand daddy) chicken and dumplings. She had made them for so many years she just used the "dump" method and mixed every thing until it "felt right". But I have had this recipe for many a year and it works pretty good.
