1 cup butter, softened
3/4 cup light brown sugar, firmly packed
1 egg
1 tsp. vanilla extract
2 1/4 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 cup sugar for rolling

Directions:
Directions:
In a large bowl, cream the butter and brown sugar using a mixer. Add the egg and vanilla extract; mix well. In a separate bowl, whisk together the flour, salt and baking powder. Add the flour mixture to the butter mixture; stir until just combined. Refrigerate dough for 30 to 60 minutes. Using approximately 1 1/2 tablespoons of dough, roll into balls. Roll the balls in the granulated sugar. Place onto parchment-lined cookie sheets. Press down once with the tines of a fork. Bake in a preheated 350º oven for 10 to 12 minutes, rotating halfway through. The edges will just start to be lightly brown. Remove to a baking rack to finish cooling.
