1 1/2 lbs. sweet potatoes
1/2 c. orange juice, divided
2 Tbsp. butter or margarine
2 cooking apples, about 8 oz. each (may substitute pears)
3 Tbsp. brown sugar
1 Tbsp. cornstarch
1/2 tsp. cinnamon
1/4 tsp. salt (I omit)
1/3 c. pecans or walnuts (optional)

Peel sweet potatoes and cut into 1" chunks. In a 2-qt. casserole dish, cook sweet potatoes, 1/4 c. orange juice and butter, covered, on High in microwave for 11-13 minutes until tender, stirring once. Meanwhile, peel and core apples; cut into 1/2" slices. Add to casserole with sweet potatoes. Cook, covered, on High in microwave for 2-6 minutes until fruit is tender, but still holds its shape. In glass measuring cup, combine brown sugar, cornstarch, cinnamon, salt, the other 1/4 c. orange juice and 1/4 c. water. Cook on High in microwave 2-3 minutes, until mixture boils and thickens, stirring once. Add to fruit mixture, tossing gently to coat. Toss with nuts, if desired.
