8 c Yellow Squash thinly sliced
2 c Onion thinly sliced
4 Bell Peppers sliced
2 c White Vinegar
3 c Sugar
2 tbsp Celery Seed
2 tbsp Mustard Seed
1 tsp Turmeric
1 jar Pimento cut (may be added for color)

Directions:
Directions:
Tie Celery and Mustard Seed in cheesecloth and set aside.

Combine squash and onions, sprinkle with salt. Add water to cover; set aside for 1 hour then drain. Combine vinegar sugar, spices, and bell pepper in large pot; bring to a hard boil. Add drained squash and onions. Bring back to a hard boil and boil until squash is tender. Put in jars and seal. Chill before serving. Makes 8 quarts.
