1 cup uncooked rice
3 tbsp. oil
4 whole chicken breasts, split, skinned and boned
1/2 cup chopped onions
3 tbsp. butter
1 lb. fresh mushrooms, sliced
1 1/2 lbs. cooked shrimp
fresh parsley, minced

Sauce:
15 oz. can tomato sauce
2 cups whipping cream
1/2 cup dry sherry
1 tsp. salt
1 tbsp. Worcestershire sauce
1/4 tsp. pepper
1/4 tsp. thyme

Directions:
Prepare rice according to package directions. Put in the bottom of a greased 9x13-inch baking dish. Heat oil in skillet. Gently sauté chicken breasts. Remove chicken and reserve 2 tablespoons of drippings from browned chicken. Sauté onions in drippings. Remove onions; add butter and sauté mushrooms in same pan. Sauce: In a bowl, combine all ingredients together. Add onion and mushrooms to sauce until well-blended. Put shrimp on top of rice in baking dish, then chicken breasts, then sauce. Bake covered in a preheated 350º oven for 60 minutes. Sprinkle with minced parsley before serving.

This was one of mom's "go to" recipes when she needed something fast and elegant. It is delicious and everyone seems to love it. Just add a tossed salad and some warm bread and you have a complete gourmet meal!
