Ingredients: 1 cup uncooked rice 3 tbsp. oil 4 whole chicken breasts, split, skinned and boned 1/2 cup chopped onions 3 tbsp. butter 1 lb. fresh mushrooms, sliced 1 1/2 lbs. cooked shrimp fresh parsley, minced
Sauce: 15 oz. can tomato sauce 2 cups whipping cream 1/2 cup dry sherry 1 tsp. salt 1 tbsp. Worcestershire sauce 1/4 tsp. pepper 1/4 tsp. thyme

Directions:Prepare rice according to package directions. Put in the bottom of a greased 9x13-inch baking dish. Heat oil in skillet. Gently sauté chicken breasts. Remove chicken and reserve 2 tablespoons of drippings from browned chicken. Sauté onions in drippings. Remove onions; add butter and sauté mushrooms in same pan. Sauce: In a bowl, combine all ingredients together. Add onion and mushrooms to sauce until well-blended. Put shrimp on top of rice in baking dish, then chicken breasts, then sauce. Bake covered in a preheated 350º oven for 60 minutes. Sprinkle with minced parsley before serving. |

Notes: This was one of mom's "go to" recipes when she needed something fast and elegant. It is delicious and everyone seems to love it. Just add a tossed salad and some warm bread and you have a complete gourmet meal!
