Ingredients: 1 1/3 cups sugar 2 whole eggs 6 egg yolks 1 cup plus 2 tbsp. sifted cake flour 1 tsp. baking powder 3 tbsp. butter 2 1/4 cups heavy cream 1 tsp. vanilla extract 1 tsp. lemon extract 1 qt. fresh strawberries

Directions:Beat together 3/4 cup sugar, whole eggs and egg yolks until very pale-colored and fluffy. Do not underbeat. This will take about 10 minutes at high speed using an electric mixer. Sift together flour and baking powder and fold into egg mixture. Meanwhile, combine butter and 1/4 cup cream and heat slowly until butter is melted. Cool slightly (to about 190º) and fold into cake batter along with extracts. Turn into a well-greased deep 9-inch cake pan or spring form pan. Bake in a preheated 350º oven for 45 to 50 minutes or until the top springs back when touched lightly. Cool in pan about 5 minutes, then remove from pan and cool on a wire rack. Cut horizontally into two layers. Meanwhile, wash and hull strawberries. Whip remaining 2 cups cream then whip in remaining 1/2 cup sugar. Spread a layer of cream on top of the bottom cake layer then top with whole strawberries and more cream. Place the top cake layer on then spread the remaining cream and garnish with berries. |
