2 cups flour
3 tbsp. sugar
1 tsp. ground cinnamon
1/2 tsp. baking powder
1/8 tsp. salt
1/2 cup butter, chilled and cut into pieces
1 cup chopped apple
3/4 cup chopped walnuts
2 eggs, beaten
2/3 cup whipping cream

Topping:
1 beaten egg yolk
1 tbsp. whipping cream
2 tbsp. sugar
1/4 tsp. ground cinnamon

Directions:
Directions:
In a large bowl, combine flour, sugar, cinnamon, baking powder and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in apples and nuts. In a small bowl, mix eggs and whipping cream. Add to flour mixture and stir until just moistened. Using a 1/4 cup ice cream scoop, scoop the dough out and place on parchment-lined baking sheets. Do not flatten. Topping: Mix whipping cream and egg yolk together; brush onto the tops of the scones. Mix sugar and cinnamon in a small dish; sprinkle over the tops of the scones. Bake in a preheated 375º oven for 15 to 17 minutes or until lightly browned. Do not over bake.

These scones remind me of a muffin top. They are light, delicious and just about fool-proof to make. The apples, walnut and cinnamon combination is just plain old-fashioned comfort food. I dare you to eat only one...they are that good!
