4 chicken breasts halves (bone in), 2 wings, 2 legs, 2 thighs,
total (14 pieces)
2 eggs
Italian bread crumbs
1/4 tsp salt
Vegetable oil*

Line baking dish with foil. Rinse the chicken and pat it dry. (remove most of skin and fat from chicken, not all) Cut breast in two inch pieces. (Cuts easier when slightly frozen). Dip in beaten eggs. Dip in salted Italian bread crumbs. Put cold oil in heated frying pan.* Heat oil. Brown chicken on Medium High, quickly on both sides. Place browned chicken in foil-lined pan. Bake 375*oven for 35-45 min. Drain on paper towels. Serve hot or cold. Sprinkle lemon and pepper on top. * Brown chicken in a regular skillet; 1/4 to 1/2 inch oil in skillet, then transfer to a 15x10x1 inch baking pan, arrange bone side down, bake uncovered until chicken is no longer pink. Do not turn.
