1/2 Cup Butter (1 stick)
1 Cup Sugar
3 Eggs
2 Bananas (mashed)
8-10 Tbsp milk
2 1/2 Cups Flour
1 tsp Baking Soda
Pinch of Salt
1 tsp Cinnamon
(optional) 3/4 Cup of chopped pecans

1 Loaf pan or 2 small loaf pans
1 Tbsp butter to grease pan
1 Tbsp flour to dust pan

Use an electric mixer for this recipe.
Pre-heat oven to 350 degrees.

Cream butter and sugar together
Break eggs in a separate bowl
Add eggs, one at a time, to the creamed mixture of butter and sugar
Add mashed bananas
Mix well

Sift flour, baking soda, salt, and cinnamon together

Add flour mixture, alternately with the milk, to the creamed mixture

Mix only until combined, do not over mix after flour has been added

Add chopped nuts, if desired

Bake in loaf pan at 350º for 55-60 min.
Check with toothpick. If the toothpick does not come out clean, cook an extra few minutes until done.

This bread was my mother's recipe and she made it often. It is great with coffee or cold milk and will last for several days. I let it cool completely, and then cover and place in the refrigerator. It can also be frozen.
