Directions:
Directions:
This recipe can be customized for any size pan. Begin by placing the potatoes in the roasting pan then adding the remaining ingredients all to taste and season generously. End with a generous dousing of olive oil all over the pan and tomato sauce diluted in water which goes half way up the pan. Bake at 375 until potatoes are very soft and water has evaporated leaving oil. You can add additional oil at the end.

You may need additional tomato sauce if you're making in a pan larger than 9x13.

You can add or substitute any vegetable you like. This really is a recipe based on personal taste...no exact measurements necessary.
