2 cans (8 oz.) pineapple chunks
2 chickens, cut up
4 tbsp. shortening or oil
1 can chicken broth
1/2 cup vinegar
4-5 tbsp. brown sugar
2 tsp. soy sauce or Worchestershire sauce
1 large clove garlic, minced
1 medium green pepper, cut in squares
3 tbsp. cornstarch
1/2 cup water

Directions:
In skillet, brown chicken in shortening, pour off fat. Mix the juice from the pineapple with the broth, vinegar, sugar, soy or Worcestershire, and garlic. Add to skillet. Cover and cook the chicken over low heat for about 40 min. Add more liquid if needed. Add green pepper and pineapple chunks. Cook 5 min. more or until done. Stir occasionally. Combine cornstarch and water. Gradually stir into juices to make a sauce. Continue cooking until thickened.

Serve with parsley-ed rice.
