4 to 8 chicken thighs, boneless skinless are good
1 c salsa
1/4 c water
3 Tbsp raisins
1 Tbsp honey
1 Tbsp cumin
3/4 tsp cinnamon
1/4 c sliced green olives (optional)
Cooked couscous, for serving

Directions:
Directions:
Season chicken with salt, pepper and garlic powder. Brown in a large skillet in hot oil. Mix remaining ingredients in a separate bowl and pour over chicken in pan. Cover and simmer for 20-30 minutes or until done. Serve with couscous, garnished with fresh parsley or cilantro if on hand.

My mother said my dad used to love this dish. It's one of those rare recipes where it's more than the sum of its parts. It sounds basic but it's surprisingly delicious. I make it all the time and kids love it too. The olives are my addition and can be omitted.
