2 c. all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
2 eggs
1/2 c. sugar
1/2 c. brown sugar
1/2 c. vegetable oil
1 Tbsp. lemon juice
1 tsp. vanilla
1 c. grated tomatoes, drained
1 c. pecans or walnuts

Combine the first 5 ingredients and set aside.
Combine eggs, sugars, oil, lemon juice and vanilla in a large bowl; beat well. Stir in tomatoes.
Add dry ingredients, stirring just until moistened. Stir in nuts.
Pour batter into a greased and floured loaf pan.
Bake at 350 for 1 hour and 5 minutes or until a wooden pick inserted in the center comes out clean.
Cool in pan for 10 minutes; remove to wire rack and cool completely.
