1 pound ground lamb
1 small red pepper, finely chopped
3 cloves garlic, finely chopped
1½ teaspoon ground cumin
1½ teaspoon coriander
1 pound penne pasta
3 tablespoons tomato paste
1 cup fresh mint leaves, finely chopped
½ cup grated Pecorino cheese (or Parmesan)

1. Heat large covered saucepot of salted water to boiling on high.
2. Heat 12" skillet on medium-high. Add lamb; sprinkle with ½ teaspoon salt. Cook 3 minutes or until browned, breaking up with back of wooden spoon. Add red pepper, garlic, cumin, coriander, and pinch of salt; cook 3 minutes or until beginning to soften, stirring occasionally.
3. Meanwhile, cook pasta as label directs. Reserve 1 cup cooking water; set aside. Drain pasta and return to pot. Stir in tomato paste and reserved pasta cooking water. Cook 2 min., stirring.
4. Stir lamb mixture, mint, and Pecorino into pasta in pot, tossing to combine. Serve with hot, crusty bread!!
