1 can 12 ounce Corned beef, finely chopped
½ cup finely chopped onions
1 egg, beaten
¾ cup dry bread crumbs
3 slices Process American cheese
1 can Cream of Vegetable soup ( I use 2 can mushroom soup)
3 large English muffins, halved, toasted
½ cup finely chopped green pepper
½ cup mayonnaise or salad dressing
1 tablespoon water
⅓ cup milk (⅔ cup if using 2 cans mushroom soup)

Directions:
Mix corned beef, green pepper, onion, mayo and dash pepper. Shape in 6 patties. Blend egg and water, dip patties into egg mixture, then into crumbs. Brown lightly in hot oil. Arrange patties in 11½"x7½"x1½" baking dish. Quarter cheese slices, diagonally overlap 2 triangles atop each patty. Combine soup and milk, heat and pour around patties. Bake at 350 degrees for 12 to 15 minutes or till heated through. Serve on hot muffin halves.
