1 package Vigo 1-step lasagna
olive oil for frying
1 cup Romano cheese, grated
3 small eggplants
1 pound Mozzarella, grated
quick Marinara sauce

Directions:
Directions:
Cut peeled eggplant into ⅛" slices, salt and brush with olive oil. Brown quickly and set aside. Put small amount of sauce on bottom of 9"x13" baking pan, then layer with lasagna noodles as shown on package. Layer with eggplant, sprinkle with grated cheese, mozzarella and sauce. Repeat layering sequence until all ingredients are used. On final layer of noodles, top with sauce and grated cheese. Bake, covered at 350 degrees for 25 minutes or until bubbly.
