Ingredients:  
Combine 1 lb. dried red beans 2 large onions chopped, 2 sticks of celery chopped, 1 chopped green pepper, and 1 clove of chopped garlic in a dutch oven.
Cover with water bring to a boil.
Reduce heat- simmer 2-21/2 hours until a thick gravy is formed (add water if needed).
Stir in 2 tbsp salt, 1 tsp pepper, and 1/4 c. chopped parsley.
Cook 2 lb. smoked sausage, cut into serving pieces.
Cook rice

Mound rice into middle of serving plate.
Spoon beans around rice.
Place sausage on plate with beans.
