2 C bread cut into 3/4" cubes (day old bread is the best)
Salt and pepper to taste
6 large eggs
1 1/2 C whole milk
2 packages (12 ounce each) bulk pork sausage (can be substituted with bacon or ham or no meat at all)
1 medium bell pepper, chopped (1 C) - optional
1 medium onion, chopped (1/2 C) - optional
1 C sliced mushrooms - optional
1 C frozen hash brown potatoes
1 C shredded cheddar cheese (8 oz)

Grease a 9x12" pan and place bread cubes in pan. Beat eggs and then add milk, salt and pepper until well blended.

Sprinkle cheese, hash brown potatoes and vegetables over bread crumbs. Pour egg/milk mixture over entire pan, covering bread evenly.

Refrigerate overnight.

In the morning, place the casserole dish into the oven at 350 degrees and bake 45-60 minutes until hot and slightly brown on top. Check center of dish with a knife to assure it is baked through thoroughly.
