Ingredients for one pie. For 2 pies, use the amounts within the parentheses.

3 (4) eggs, slightly beaten
1 (1 1/3) cup sugar
1 (1 1/3) salt
1 tsp. (1 1/3) tsp. pumpkin pie spices
2 (2 2/3) cups pumpkin
1 1/2 cup milk, scalded
1/2 cup cream
(2 2/3 cup cups, combined, for two pies.)

Directions:

Line pie pan with pastry and flute rim. Combine eggs, sugar, salt and spices. Gradually stir in milk and cream; then pumpkin. Pour into pie shell and bake in hot oven (450 degrees) for 10 minutes. Reduce heat to 350 degrees and bake for 20-25 minutes more, or until knife comes out clean. Makes large pie(s).
