Fresh White Acre Peas - 1lb. (Get at the Farmers Market - already shelled)
Chicken Broth - unsalted
Bacon Bits and Bacon Drippings
Vidalia Onion - Small sized - Diced

Directions:
Directions:
Thoroughly wash peas. In a saucepan, add peas, cover with chicken broth, add bacon bits and about 2+/- TBL of bacon drippings. Bring to a boil and immediately reduce heat to low and simmer for about 20 minutes. Drain and serve. Salt and pepper to taste.
Do not add salt while cooking. It will make your peas hard and tough.

I also cook Collard Greens exactly the same way but add a bit of vinegar to the mix.
