2 1/2# red skinned potatoes, scrubbed and thinly sliced
2 onions, thinly sliced
2 garlic cloves, minced
3 TBS butter, cut into small pieces
2 TBS parsley
1 tsp dried thyme, 1 tsp dried oregano and 1 tsp dried rosemary
1 1/2 cups vege stock or chicken stock
1 cup grated swiss or Gruyere cheese

Directions:

Spray the inside of the slow cooker with vegetable oil. Combine potatoes, onion, garlic, butter, parsley, and herbs in the slow cooker. Pack it down evenly. Pour stock over potatoes.
Cook on low for 6 to 8 hours or on high for 3 to 4 or until potatoes are tender. Stir in the cheese, and season with salt and pepper. Cook for an additional 10 to 15 minutes or until cheese is melted.
