Shrimp Ceviche Recipe

1 pound shrimp, cleaned, peeled and chopped
1/2 cup lime juice
1/2 medium onion, chopped
1/3 cup fresh cilantro, chopped
1/2 cup ketchup
1-2 T hot sauce
2 T olive oil
1 cup cucumber, peeled and diced (I scoop out the seeds)
3-4 chopped tomatoes

Put shrimp in a large stainless steel bowl with lime juice and cover with plastic wrap. Refrigerate for one hour.
(Some people use raw shrimp and the lime juice is supposed to "cook" the shrimp -- but I don't chance it and use cooked shrimp!)
In a small strainer, rinse chopped onion under cold water and drain well. Add to shrimp bowl with cilantro, ketchup, hot sauce, olive oil and cucumber. Mix gently, taste and season with salt. Cover and refrigerate or serve immediately with tortilla chips.

I have found that it tastes best when made the day that you serve it!
