2/3 tbsp. salt
1/2 tsp dried thyme
1/2 tsp dried basil
1/3 tsp oregano
1 tbsp. celery salt
1 tbsp. black pepper
1 tbsp. dried mustard
4 tbsp. paprika
2 tbsp. garlic salt
1 tbsp. ground ginger
3 tbsp. white pepper.

This is sufficient for about twenty pieces of chicken, which need to be taken out of the fridge at least thirty minutes before.
In a shallow bowl mix up one and a half cups buttermilk with1 large egg, dip each piece into this and then dredge into the flour and spice mix, place on to a wire rack.
Into a wide pot pour in 4 cups canola oil and once temperature has reached 325F. place in 3-4 pieces at a time, without crowding the pot for 10-14 minutes. Larger pieces will take longer. Use tongs to turn the pieces. Set aside on another rack, chicken will be cooked when internal temperature reaches 160 F.
You can always finish it off in the oven.
