Make these preserves when lemons are abundant, they are so much cheaper (and better) than shop bought ones.
Cut tops off lemons and cut into 4 slices without slicing the whole way through. Put a cup full of salt into jar then add about one desert spoon of salt into the opened up lemon. Close lemon and place into jar. Continue until jar is full then pour in enough lemon juice to cover. Put lid on jar and give a good shaking to thoroughly mix the salt in. Refrigerate for at least a month before using. Shake occasionally to help salt dissolve. When using remove from jar and rinse off the salt.
