Ingredients: 1/2 cup butter, softened 3/4 cup light brown sugar 1/4 cup white sugar 1 egg 1 egg yolk 1 1/2 cups flour 1/2 tsp baking soda 2 tsp vanilla 1/4 tsp salt 1 cup mini chocolate chips 1/2 cup walnuts 2 oz bitter sweet chocolate, roughly chopped (optional) 2 tsp canola oil (optional)

Directions:1 In a medium bowl, whisk together flour, baking soda and salt, set aside 2 In a stand up mixer with a paddle attachment, cream butter and sugars together until light in color and fluffy (about 3-5 minutes) 3 Add in egg, egg yolk, and vanilla one at a time, allowing each to beat in completely before adding the next 4 Add all of flour mixture 5 Turn mixer to low speed and allow dry ingredients to mix in, once just combined, add in chocolate chips and walnuts, scrape down sides as necessary 6 Cover bowl with plastic wrap and chill over night 7 Once ready to bake, preheat oven to 375 8 Roll chilled dough into 1 1/2 - 2" balls 9 Place on lined baking sheet and bake for 10-12 minutes (11 was perfect for me), take out cookies and let them cool, they may look under baked!! Do not bake them longer! 10 Once cooled for 5 minutes on baking sheet, move to wire rack to allow to cool completely
For Dip: 1 Add chopped dark chocolate and oil into a small bowl, place in microwave in 30 second bursts to slowly melt 2 Stir after each 30 second increment until fully melted 3 Dip half of cookie into melted chocolate and place on parchment paper, chill to allow chocolate to harden
Notes *You can use a scoop to make sure the cookies are all perfectly the same size, but I just eyeballed it, and this recipe made a dozen and a half cookies |
