Directions:- As with all salads I make, I start by soaking my lettuce in ice water for at least 30 minutes if not longer. If you don’t have a salad spinner I would highly recommend getting one. It makes a night and day difference with salad lettuce. You can soak the salad in ice water and spin off the water when done. I use my salad spinner daily. - Next is the bacon. It goes without saying, DON’T SKIMP on the BACON! The bacon really needs to be crispy to hold up in the dressing. - Finely diced cucumber, onion, tomato, and any other produce you like. I sometimes add diced radishes cuz Erin likes them. -In a large bowl add lettuce, mayo, red wine vinegar, oregano, bacon, diced produce (onion/tomato/cucumber/whatever), salt and fresh ground pepper and mix. This should be done as soon as you are ready to serve it as possible. This salad will get soggy soon after mixing wet ingredients. I usually make all the ingredients and assemble just prior to serving. The end.
I will often make a batch of this dressing (mayo, red wine vinegar, oregano, salt and pepper) and put it in a squirt bottle for quick salads during the week. |
