Elbow Macaroni
Diced Carrots and Onions
White Wine Vinegar
Sugar
Salt and Fresh Ground Pepper, to taste

Macaroni Salad:
 
- Boil as much elbow macaroni (or any other pasta) as needed, bowtie pasta works too but elbow is best I think.  Make sure not to overcook to prevent mushy pasta.
- Add mayonnaise to liberally coat all pasta
- Finely dice carrots and onions and add to mixture.  Amount depends on how much pasta was made, use judgment.
- Add white wine vinegar.  Judgment again, not too much to wash out mayonnaise.
- Add sugar.  This will have to be to taste as you stir it in.  Don’t hold back on the sugar!
- Add salt and fresh ground pepper
 
Mix well and if time allows refrigerate over night to allow mayonnaise to set up and for pasta to absorb ingredients.  I usually have to add more mayonnaise the next day after things have incorporated over night.  You may have to add more vinegar, sugar, and/or salt and pepper as well.  Making this the day before is really key to get this one right.  This one has always been a hit!  Doesn’t look like much but is a silent Giant!
