3 cups frozen hash browns, thawed
3 tablespoons melted butter
1 cup diced ham (or sausage)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4-6 eggs
1/2 cup milk
salt and pepper to taste

Directions:
Directions:
Press hashbrowns onto and up sides of a pie pan. Drizzle melted butter over hashbrowns. Bake at 400 for 20 minutes. Toss together ham and cheese and place in crust. Beat eggs and milk and pour over cheese mixture. Bake, uncovered at 350 for 25 to 30 minutes or until knife inserted in the middle comes clean. Let stand 10 minutes before serving.

This recipe easily doubles. I generally use a package of simply potatoes hashbrowns and about eight eggs when I double. Use 9x13 pan.
