3 cups frozen hash browns, thawed
3 tablespoons melted butter
1 cup diced ham (or sausage)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
4-6 eggs
1/2 cup milk
salt and pepper to taste

Directions:
Press hashbrowns onto and up sides of a pie pan. Drizzle melted butter over hashbrowns. Bake at 400° for 20 minutes. Toss together ham and cheese and place in crust. Beat eggs and milk and pour over cheese mixture. Bake, uncovered at 350° for 25 to 30 minutes or until knife inserted in the middle comes clean. Let stand 10 minutes before serving.

This recipe easily doubles. I generally use a package of simply potatoes hashbrowns and about eight eggs when I double. Use 9x13 pan.
