10 lbs redskin potatoes
1-1/2 cups sour cream
1/2 cup milk
1-1/2 sticks of unsalted butter
4 cups shredded cheddar cheese (divided)
1/2 lb sliced bacon, cooked and crumbled
salt and pepper to taste

Directions:
Directions:
Cook redskin potatoes in oven at 350º until tender.
Hand mash with skins in extra large bowl.
Add sour cream, milk, butter, salt and pepper.
Continue to hand mash together while stirring in 3 cups of cheese, bacon and onions.
Transfer to extra large baking dish
Top with remaining shredded cheese.
Bake at 350º for 30 minutes, or until heated thoroughly.
