"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

3/4 lb. ground pork
3/4 cup finely chopped onion
1 clove garlic, crushed
1 teaspoon finely cut parsley
2 cups water
2 (6 oz.) cans tomato paste
1/2 teaspoon pepper
1 teaspoon salt
1 lb. mozzarella cheese, sliced thin
1 lb.cottage cheese (large curd) or Ricotta cheese

Cook the Lasagna according to the directions on the side panel. Meanwhile, cook the Ground Beef and Pork in a large, heavy saucepan until the color just changes.
Add the Onion, Garlic, Parsley, Water, Tomato Paste, Pepper and Salt. Bring to a boil. Then, turn the heat low and let simmer gently for 30 minutes.
In a greased 151/2 x101/2 x21/2" baking pan arrange first a layer of drained Lasagna and then the alternating layers of mozzarella and cottage cheese. End with a layer of Mozzarella Cheese.
Over this sprinkle the grated Parmesan Cheese. Bake in a 350F (moderate) oven for about 20 to 25 minutes or until the Mozzarella is just melted.
