2 cups cooked rice
1 lb ground beef
1 tbsp olive oil
2 large green peppers diced
1/2 cup frozen diced onion
29oz can drained diced tomatoes
3 14oz cans tomato sauce
2 14 oz cans corn drained
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
2 cups shredded cheddar cheese

brown beef, set aside
heat oil in stock pot on medium heat and add peppers and onion
saute 5-10 minutes
add tomatoes sauce corn and seasonings to the peppers
bring to a boil
reduce heat and simmer 5 min
stir in meat and rice
pour into 9x13 baking dish, top with cheese. bake at 350 12-15 min or till heated through
