2 c. Flour
2 c. Sugar
1 c. Pecans or Walnut
2 tsp. Baking Soda
1 (20 oz.) can Crushed unsweetened pineapple
3 Eggs, beaten
1 (8 oz.) Cream Cheese
1 stick Butter
1 tsp. Vanilla
2 c. Powdered Sugar
Chopped Nuts
Marchino Cherries ( optional )

Directions:
Directions:
Mix flour, sugar, nuts, baking soda, pineapple and eggs by hand. Pour into greased and floured pan ( flat pan or angel food cake pan). Bake at 350º for 45 minutes. For icing, mix cream cheese, butter, vanilla and powdered sugar until smooth and creamy. Spread on cooled cake. Top with chopped nuts and Marchino Cherries (optional)
