Chicken breasts (1/2 breast per serving)
Swiss cheese – 1 thin slice per serving
Baked ham -1 thin slice per serving
2 eggs beaten
4 T. cornstarch mixed with 1/2 c. dry bread crumbs (fine)
3 T. butter
3 T. oil

Directions:
Directions:
Debone chicken.
Beat chicken breasts to flatten; brush with egg mix and layer with cheese and ham. Roll to form.
Place seam side down on platter and chill for at least 1/2 hour.
Roll chilled breasts in egg mix, then in cornstarch-crumb mix.
Refrigerate again for 1/2 hour or longer.
Fry in oil and butter mix at medium temperature until golden.
Drain and serve.
