Date Filled Cookies Recipe

1 cup shortening
1/2 cup water
1 t baking soda
1 t salt
2 cups brown sugar
3 1/2 cups flour
2 eggs
1/2 t cinnamon
1/2 t vanilla
Date filling:
2 cups dates (cut fine)
3/4 cups sugar
3/4 cups water
1/2 cup chopped nuts

Preheat oven to 400
Mix shortening, sugar and eggs together. Stir in water and vanilla.
Sift together flour, baking soda, cinnamon add to mixture
In pan, add dates, sugar, water and nuts - cook 5 minutes or until thick and then cool
Drop by Tablespoon on greased cookie sheet and place a teaspoon of dates on cookie dough
Bake 10-15 minutes
