1/2 cup vegetable shortening
1 cup brown sugar
1 egg
1 t vanilla
1 cup cooked pumpkin
2 cups flower
1 t baking soda
1/4 t salt
1 t cinnamon
1 t nutmeg
1 t ground cloves
if you desire add 1/2 chopped nuts or 1 cup raisins
Glaze:
1 cup confectionery sugar
2 T water

Preheat oven to 350
Cream together shortening and sugar, add egg, vanilla and beat until light and fluffy. Beat in pumpkin. In separate bowl, stir together flour, baking soda, salt, cinnamon, nutmeg an cloves. Add dry mixture to moist mixture and beat until the dough is completely mixed, stir in nuts or raisins if you wish.
Drop by heaping teaspoonfuls about 1 inch apart onto a cookie sheet. Bake for 10 minutes, until lightly browned around the edges
Brush the hot cookies with the glaze

Use same recipe for applesauce cookies just substitute pumpkin with applesauce
