2 lbs. Salmon Fillets
3/4 c. olive oil
3 Tbsp Dijon Mustard
3 Tbsp. lemon juice
1 Tbsp. minced shallot or 3 Tbs. finely chopped green onions
salt and pepper to taste

Directions:
Directions:
In a flat shallow glass dish combine the olive oil, Dijon mustard, lemon juices and shallot or green onions. Roll salmon in mixture to coat both sides, cover and refrigerate for 1 to 2 hours. Preheat oven 375º, remove salmon from mixture. Place salmon (skin side down) in a shallow dish or pan, cover bottom of pan with 1/8" water. Spoon more Dijon mixture over Salmon. Bake for 10 to 12 minutes per inch of thickness or until salmon turns translucent to opaque and flakes easily when tested with a fork at the thickest part.
