Crust:
1 package active dry yeast
1 cup warm water (105 to 115 degrees)
2 1/2 cups all purpose flour
1 tsp sugar
1 tsp salt

Toppings:
2 cloves garlic, chopped or crushed
2T olive oil
2 cups shredded mozzarella
1 cup shredded gouda
1/2 cup grated parmesan
1-2 tomato, sliced thin (optional)
fresh basil (optional)

Directions:
Directions:
Preheat oven to 425 degrees F
Put garlic and olive oil in a bowl and let sit while you make the dough.

For Dough: Dissolve yeast in warm water in a large mixing bowl. Stir in flour, salt and sugar. Beat vigorously for at least 20 strokes (or use a mixer). Let dough rest at least 5 minutes. Divide dough in half. With floured hands, pat dough into 11" circle onto pizza stone (preferred) or baking sheet. (If you only have one pan, make and bake one at a time!)

For Toppings:
Brush dough circle all over with garlic oil.
Mix all cheeses together. Top each pizza with half of the cheese. Top cheese with tomato slices and basil, if desired.
Bake pizza on bottom rack of oven at 425degF for 13-15 minutes until cheese is light brown.
