Banana Nut Bread Recipe

1/2 cup softened butter
1 cup sugar
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed bananas
1/2 cup finely chopped walnuts

Preheat oven 350*

Grease 9x5" loaf pan or 3-4 mini loaf pans (I prefer mini)

Cream butter and sugar thoroughly. Add eggs one at a time and beat well. Sift flour, baking soda and salt. Add to creamed mixture alternately with bananas. Fold in nuts.

Pour into greased loaf pans and place onto a baking sheet.

Bake at 350* for 55-60 (times may be less for mini loaves) or until a toothpick comes out clean. Cool slightly, remove from pans and cool on cooling rack until completely cool. Freezes well.

My mother's recipe (Marian Ayers). I used to hate the nuts in the bread so she would make some without nuts. Now, I only make the bread with the walnuts in it and my own kids LOVE it that way!
