Cranberry Orange Bread Recipe

2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup orange juice
2 Tbsp vegetable oil
1 Tbsp orange peel zest
1 egg, well beaten
1 1/2 cup fresh or frozen cranberries, coarsely chopped
1/2 cup chopped nuts (optional)

Preheat oven 350*

Grease 9x5" loaf pan or 3-4 mini loaf pans (I prefer the mini).

Mix flour, sugar, baking powder, salt, baking soda in med. bowl.

Stir in orange juice, oil, orange zest and egg. Mix until completely blended.

Stir in cranberries (and nuts if desire which I do not for this recipe, but you may like to).

Spread evenly in loaf pans and place loaf pans onto baking sheet. Bake approx. 55 minutes (may be less for mini loaves) or until toothpick comes out clean.

Cool on rack 15 minutes. Remove from pan, cool completely.
