1 lb. ground beef, cooked
1 can black beans
1 can corn
2 tomatoes, chopped
1 cup salsa
2 cups shredded cheese, mexican mix
10 tortillas, 10 inch
1 20 oz. can of enchilada sauce

Directions:
Directions:
Mix the cooked ground beef, black beans, corn, tomatoes, salsa, and 1 cup of cheese. Stir in a bit of enchilada sauce, enough to make the filling stick together more.

Use a 13x9 inch pan. Spread a thin layer of enchilada sauce across the bottom of the pan. This keeps the enchiladas from burning on the bottom, and from sticking to the pan.

Warm the tortillas, either in the microwave or on the stove. Fill each tortilla in turn, with about 1/2 cup of filling. Roll the tortilla and tuck the ends under as it is placed in the pan.

Once the pan is full, pour the remaining enchilada sauce on top of the enchiladas. Using a fork or spatula, push around the edges to be sure that enchilada sauce is between the tortillas and the pan. Sprinkle the remaining cheese across the top of the enchiladas.

Bake the enchiladas for about 20 minutes, or until bubbles rise from the center of the pan. Remove and serve.

I don't usually use a recipe for this, but I tried my best to get the measurements right. I don't think you can go wrong with more ground beef, or with taco seasonings.
