1 1/2 cups vegetable oil
1 1/2 cups sugar
1/2 cup brown sugar
3 eggs
3 cups all-purpose flour
2 tsp cinnamon
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
3 1/2 cups chopped apples (any kind, but tart apples such as Granny Smith does well)
1 cup chopped walnuts (I have used pecans)
2 tsp vanilla pure vanilla extract

ICING:
1/2 cup brown sugar
1/3 cup half and half
1/4 cup butter
dash of salt
1 cup confectioner's sugar

CAKE:
Combine oil and sugars. Add eggs one at a time, beat well after each egg. Combine dry ingredients, add to batter, stir well. Fold in apples, nuts and vanilla. Pour into greased and floured tube (or bundt) pan. Bake at 350º for 1 1/2 hours or until done, toothpick comes out clean. Cool 10 minutes before removing from pan.

ICING:
In top of double broiler over simmering water, heat brown sugar, cream, butter and salt. Stir until sugar is dissolved. Cool to room temperature. Beat in confectioner's sugar. Spread over cake, sprinkle with chopped nuts if desired.

Takes a little longer, but well worth the wait. I have relatives (you know who you are Sherry) that begs for this cake at Fall gatherings!
