1 medium red onion, roughly diced
2 medium cucumbers, peeled, sliced 1/2 inch thick and halved
1/2 green pepper, thinly sliced and cut into 1-in strips
2 large tomatoes, seeds removed and diced
2 T. white vinegar
1/2 cup mayo
1 T dried parsley flakes
4 T granulated sugar
1tsp. seasoning salt (or to taste)
1 tsp. dried dill

Peel and slice cucumbers in 1/2-inch slices. Then half each slice and transfer all slices to a large bowl. Thinly slice 1/2 green pepper, cut into 1-inchstrips and add to bowl. Toss veggies. Add all remaining ingredients and mix well. Refrigerate at least 2 hours, stir after 1 hour

Note: Cucumber sliced too thin may wilt, to maintain crunch 1/2-inch thick is recommended. Salad may appear dry at first but it will have a creamy texture by the time you serve.
