Pumpkin Bread Recipe

2 cups pumpkin puree
3 eggs
1 cup vegetable oil
3 cups flour
3 cups sugar
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp pumpkin pie spice
1 cup chopped walnuts (optional)

Preheat 350 Grease and flour two 8 1/2 X 4 1/2 loaf pans

In a small bowl, combine pumpkin, eggs, and oil.

In a large bowl, combine flour, sugar, cinnamon, nutmeg, salt, baking powder, baking soda, and pumpkin pie spice.

Add pumpkin mixture and walnuts (if desired) to dry ingredients. Stir until just combined. Spoon into prepared pans.

Bake for 1 hour until deep golden brown and a wooden toothpick inserted in center comes out clean.

Cool completely
