Zucchini Bread Recipe

3 eggs
1 Tbsp lemon zest
1 cup oil
2 cups flour
1 cup sugar
1 tsp vanilla
1 tsp baking powder
2 cups shredded zucchini
1 tsp salt
1 tsp cinnamon

Preheat oven to 350

In a large bowl mix together the eggs, oil, sugar, and vanilla. Slowly add the zucchini. Then add the lemon zest and mix thoroughly.

In a separate large bowl combine the flour, baking soda, baking powder, salt, and cinnamon.

Slowly add zucchini mixture to the flour mixture until completely combined. Divide batter into 2 greased loaf pans.

Bake for at least 1 hour or until skewer comes out clean.
