Ingredients:  
1 lb of Chicken Tenders
2 Eggs beatened
8 oz Sweetened Coconut Flakes
8 oz Panko or Breadcrumbs
Salt & Pepper to taste

Oil for frying

* Optional - 1/2 c of Coconut Milk *

Directions:
Directions:
1. Combine Coconut and Panko in a shallow dish.
2. Add Salt & Pepper to the eggs
3. If using coconut milk, add to the eggs as well.
4. Pour over chicken and coat all pieces.
5. Add pieces 1 and 2 at a time and coat the chicken with the coconut/panko mixture.
6. Add chicken to hot oil and cook until browned.
