4 large cucumbers peeled
1 small head cauliflower
6 large onions
1 green pepper
1 sweet red pepper
1/4 c coarse pickling salt
3 c granulated sugar
1/2 c flour
3 tbsp. dry mustard
1 1/2 tsp turmeric
1 1/2 tsp mustard seed
3 c Heinz White Vinegar
1 c water

Directions:
Directions:
Chop vegetables finely or put through coarse blade of food chopper. Sprinkle with salt and add 2 1/2 c cold water. Let stand 1 hour and drain well. Mix together sugar, flour, mustard, turmeric and spices in large heavy saucepan. Stir in vinegar and water gradually. Add drained vegetables, bring to boil and simmer 1/2 to 1 hour stirring often. Pack into hot sterilized jars. Seal.

For a chunky relish, chop vegetables coarsely rather than finely. Cauliflower may be omitted and cucumbers increased to 6.
