French Unbaked Cake

Line 13”by 9” bar pan with parchment paper.

Crumble 4 cups (2 sleeves) graham crackers (or digestive biscuits).
Chop ½ cup walnuts or pecans.
Stir together with 1 cup shredded coconut.

Combine in large saucepan:
• ¼ cup cocoa powder
• 1 cup brown sugar
• 2 beaten eggs
• 1 cup softened margarine or salted butter
Heat on stovetop, stirring regularly, until bubbling. Boil for one minute, stirring.
Remove from heat and stir in 1 tsp vanilla.
Add dry ingredients and stir until moistened and combined.
Press mixture into bar pan.

Icing:
• ¼ cup softened butter
• 2 tbsp cocoa powder
• ¼ cup hot strong coffee (espresso , or 1 tsp instant coffee with boiling water)
• icing sugar
Beat until smooth, and spread over mixture.

Chill, and cut to serve.
