1 butternut squash
2 large sweet onions
butter
brown sugar
Monterrey jack cheese
Half & half
buttered bread crumbs

Caramelize the onions with butter and brown sugar. Slice the squash into thin ribbons, like lasagna noodles. Layer a casserole with squash slices, onions, and jack cheese. We did about 3 layers. Top it off with buttered bread crumbs and bake at 350 for an hour. Also, he said to add some half & half to moisten it. I sprinkled that over it. He gave very general instructions, but it turned out great.

We had this delicious dish at the Cowgirl Restaurant in Santa Fe. We asked the cook for the recipe and he gave very general instructions, but it turned out great when I made it..
