1 cup onion, sliced
1/2 small green pepper, sliced
2 Tbl bacon drippings or olive oil
3 cups zucchini squash (sliced)
1 (14 oz) can tomatoes
salt and pepper to taste
1/2 cup grated Parmesan cheese

Directions:
Directions:
Saute onion and pepper in hot oil. Add zucchini and cook for 2 minutes.
Place in a shallow casserole dish; add tomatoes, salt and pepper.
Bake at 350º for 20 to 25 minutes or until squash is tender. Sprinkle with cheese and cook until cheese melts.
