1 Large lemon
4 eggs
1 stick butter (8 T.)
1 t. vanilla
1 1/2 C sugar
1 unbaked pie crust

Directions:
Leaving rind on lemon, cut lemon into small chunks and remove seeds. Put all in blender and - blend the crap out of it - until smooth. Pour into pie shell and bake at 350º approximately 1 hour until knife inserted in center comes out clean.
(325º approximately 40 minutes for glass pie plate)

A friend sent me this from Arizona and I didn't believe it would work, but it is very easy and delicious, almost like a chess pie but more lemony .
